<p>Today we’re celebrating Mexican Independence Day, so we want to share with you a few traditional dishes that are really easy to cook at home.</p>
<p>A bit of history first though. Mexican Independence Day celebrates the ‘Grito de Dolores’. On 16<sup>th</sup> September 1810 a priest in the small town of Dolores in Guanajuato rang the church bell to gather everyone in the town. He spoke out against the Spanish Crown which ruled at the time, and persuaded the townsfolk to rise up against them, starting Mexico’s War of Independence.</p>
<p>This is celebrated every year by Mexican communities across the world with food, songs, dancing and fireworks. Traditional foods are eaten, usually the colours of the Mexican flag; red, white and green. So, we’ve got some colourful dishes for you to try tonight to celebrate, Mexican style.</p>
<p>An unusual way to use tortillas is this lovely red <a title="tortilla soup recipe" href="http://www.missioninyourkitchen.co.uk/recipes/tortilla-soup">tortilla soup recipe</a> which has a bit of kick with a hint of chilli. <a title="Green Enchiladas" href="http://www.missioninyourkitchen.co.uk/recipes/green-enchiladas">Green enchiladas</a> are a perfect dish for a family meal, which use our soft flour tortillas from our Mexican range. Our <a title="Ceviche tastadas" href="http://www.missioninyourkitchen.co.uk/recipes/ceviche-tostadas">Ceviche tostadas</a> are great for having friends over and you can use your favourite white fish to make them your ideal tasty snack.</p>
