Breakfast Piadina with Fried Egg and Crispy Bacon

Ingredients

4 Mission Italian Piadinas
250g [9oz] sausagemeat  made into 4 x 60g [2 ¼ oz] patties
4 field mushrooms
4 tbsp olive oil
Salt and pepper
40g [1 ½ oz] baby spinach leaves
4 eggs, fried
250g [9oz] streaky bacon

Method

Preheat the grill to a moderate heat.

Drizzle the mushrooms with a little oil and season before grilling. Grill the bacon until crispy.

Fry the patties until golden, keep  them warm, while frying the eggs.

Meanwhile, warm each Mission Italian Piadinas in a dry frying pan.

To serve top fold the Mission Italian Piadina in half and insert a pattie and a couple of rashers of bacon. Sprinkle the spinach leaves on the top and add the mushroon and with fried egg.
