Ranch Style Eggs (Huevos Rancheros)
Ingredients
4 Mission Mexican Flour Tortillas
1 tbsp olive oil
1 large onion, sliced
1 large red pepper
1 chilli, jalapeno or hotter to suit taste, chopped
1 large clove garlic, crushed
1 tsp oregano
400g chopped tomatoes
4 fresh eggs
Method
Preheat oven 180oc/gas 5
Use an ovenproof frying pan/skillet
Gently fry the onion in the olive oil until soft, add the chopped pepper, chilli, garlic and oregano. Stir well and add the tomatoes, allow to bubble away until slightly reduced.
Make 4 hollows in the sauce and gently break an egg into each one.
Put the whole pan into the oven and continue to cook until the eggs have set, about 10 mins
Serve with warmed Mission Mexican Flour Tortillas.
